2 cans albacore tuna
1 large egg, beaten 
1/2 cup panko breadcrumbs
1 tablespoon Dijon mustard
1 teaspoon smoked paprika 
1 tablespoon garlic salt
2 tablespoons hot sauce
2 tablespoons honey
1/4 cup pickled vegetables 
3 tablespoons tobiko
2 tablespoons olive oil
Handful fresh dill
Lemon zest
Salt & fresh-ground pepper


1. In a medium mixing bowl, combine tuna, egg, panko breadcrumbs, Dijon mustard, smoked paprika, and garlic salt until well incorporated.

2. Form four patties of equal size with the tuna mixture. Place on a plate and refrigerate 15 minutes to firm.

3. Preheat grill to 375°.

4. Grease entire cooking surface of grill with olive oil. Place patties on grill and cook 2 minutes per side, or until golden brown.

5. While the patties are cooking, mix together honey and hot sauce.

6. Place cooked tuna croquettes on plate, followed by the pickled vegetables, tobiko, dill, and lemon zest. Drizzle with the honey hot sauce.
