Grilled Corn Salad with Lime Cilantro Dressing

This Grilled Corn Salad with Lime Cilantro Dressing is the perfect side dish for your Memorial Day outdoor BBQ meal. It features deliciously charred corn kernels mixed with vibrant vegetables and a zesty dressing.
Using the Kalorik 16qt Air Fryer Oven, you can easily achieve that grilled flavor without firing up the grill. This recipe serves 6-8 people, making it ideal for a gathering.
Ingredients
6 ears of corn, husked
1 red bell pepper, diced
1 green bell pepper, diced
1 small red onion, finely chopped
1 jalapeño pepper, seeds removed and finely chopped
1 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
1/4 cup fresh lime juice
2 tablespoons extra-virgin olive oil
1 tablespoon honey
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
For the lime cilantro dressing:
Directions
Preheat the Kalorik 16qt Air Fryer Oven to 400°F (200°C) in the air fryer mode.
Place the corn ears in the air fryer basket, making sure they are not overlapping. Air fry for about 12-15 minutes, turning them halfway through, until the corn is nicely charred. Remove and let them cool.
Once the corn has cooled, cut the kernels off the cob using a sharp knife and transfer them to a large bowl.
In the same bowl, add the diced red and green bell peppers, chopped red onion, jalapeño pepper, cherry tomatoes, and chopped cilantro. Season with salt and pepper to taste.
In a separate small bowl, whisk together the lime juice, olive oil, honey, minced garlic, chopped cilantro, salt, and pepper until well combined.
Pour the lime cilantro dressing over the salad ingredients in the large bowl. Toss well to ensure everything is coated evenly.
Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Before serving, give the salad a quick toss and adjust the seasoning if needed.
Recipe Note
Chef's Tip: To plus up this recipe, you can add additional ingredients such as black beans, crumbled feta cheese, or avocado slices.
