These very vegetarian burgers have all the crunch of your favorite falafel without the oil, fat or grease! Use your Kalorik air fryer to cook the sliders to crispy perfection and offer a healthier version of everyone’s favorite slider at your big game football party~
2 (14-ounce) cans garbanzo beans, rinsed and drained
1 shallot, peeled and chopped
2 garlic cloves, crushed
2 Roma tomatoes, seeded and chopped
1/4 cup feta cheese
1/4 cup fresh parsley leaves
Zest and juice of 1 lemon
1/2 teaspoon ground cumin
4 tablespoons all-purpose flour
1 tablespoon good-quality olive oil
8 slider rolls
Thinly sliced red onion
1 seedless cucumber
1 cup Greek yogurt
2 garlic cloves, minced
1 tablespoon freshly chopped dill
1 tablespoon freshly chopped mint
1 tablespoon lemon juice
Salt & freshly ground pepper
1. Combine the garbanzo beans, shallot, garlic, tomato, feta, parsley, lemon zest, cumin and flour in your food processor and pulse to combine (the mixture should be firm enough to shape into burgers; if the mixture is too loose, add more flour; if too dry, loosen it with additional lemon juice).
2. Divide the mixture into 8 equal 1/4-cup size burgers. Using your hands, shape them into patties. Refrigerate for 1 hour before air frying.
3. To make the tzaziki, peel, seed, and shred the cucumber with a box grater (using the large holes). Then squeeze the shredded cucumber dry with a dish towel to reduce moisture.
4. Combine the cucumber, yogurt, garlic, dill, and mint in a mixing bowl. Season with salt & pepper and stir to combine. Refrigerate until ready to use, preferably a half hour or more, to allow the flavors to meld.
5. Brush the basket of your air fryer with a thin coating of olive oil. Place the falafel in the basket in a single layer and brush the tops of with olive oil. Air fry at 400ºF for 10 minutes, flipping the sliders over halfway through cooking.
6. Split the rolls in half and pile each one with a lettuce leaf, a falafel feta slider, sliced red onion, sliced tomato and a spoonful of tzatziki.
