CORNMEAL DUSTED COD

Ingredients

¼ cup yellow cornmeal
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon dried onion flakes
½ teaspoon dried parsley
¼ teaspoon salt
¼ teaspoon pepper
1 pound Alaskan cod
Olive oil cooking spray

Instructions

1. Preheat grill to 1500°F.

2. In a small mixing bowl, combine cornmeal and spices until thoroughly blended.

3. Place cod on grill grate and coat with olive oil cooking spray. Sprinkle cornmeal mixture over both sides of cod, tapping off any excess.

4. Position grate with cod in the middle of the grill and cook approximately 4 minutes per side, or until fish flakes with a fork.

    I’m pretty sure the correct temperature should be 350°F. That would be the temperature I would use in a regular oven if I were baking the fish and probably for about 10 – 15 minutes depending on the thickness of the fillet. Maybe faster in an air fryer. Check after 5 minutes to see have fast the fish is cooking. Good luck.
