Ingredients
2 ½ cups oats, rolled
1 cup whole almonds, roughly chopped
1/3 cup honey
1/3 cup canola oil
1/3 cup brown sugar, packed
¼ cup applesauce
1 teaspoon vanilla extract
½ teaspoon salt
½ cup dried cherries
½ cup of chocolate chips, plus two tablespoons

Directions
Preheat your oven to 350F. Spread rolled oats in an even layer and bake for 5-7 minutes, stir, and bake for another 5 minutes until lightly toasted. Repeat with the Almonds. Once toasted, set aside to cool.
In a small pot combine honey, oil, brown sugar, applesauce, vanilla, and salt. Bring to a simmer and stir well.
Add toasted oats and almonds to a large bowl, mix in simmering honey, sugar and applesauce mix and mix until well coated. Spread granola against the sides of the bowl and allow it to cool for 5-8 minutes.
Add in dried cherries and chocolate chips. Mix very well. The chocolate will mostly melt- it’s important to help the bars stay together.
Line the bottom and side of an 8x8 baking pan with parchment paper, making sure the parchment extends beyond the pan by 2-3 inches on each side. Add oat mixture and press firmly down with your hands. Sprinkle the top with the remaining two tablespoons of chocolate chips, top with another piece of parchment and add the second baking pan on top.
Press firmly onto the top pan to press the bars into shape. Add several cans or a jug of water to the top pan to weigh down the bars. After 45 minutes the bars should be firm enough to cut. Using the parchment paper tabs to help get the bars out, remove the bars and carefully cut into 12-14 bars. Enjoy right away or wrap tightly in plastic wrap to enjoy them for up to a week.

For the chewiest bars store at room temperature! If you like a firmer bar, store in the fridge!
