BRUSCHETTA

The secret to this appetizer favorite is the very ripe tomatoes and I love to finish with a sprinkling of flake salt for a boost of flavor. The garlic clove “rub” infuses fabulous flavor without the overwhelming taste of raw garlic.  And, I always toast bread and make crostini in my Kalorik Air Fryer; it’s just so easy.

Ingredients

Ciabatta Bread or French bread
Good quality olive oil, for brushing the bread
1 garlic clove, peeled and left whole
2 large red heirloom tomatoes
8 fresh basil leaves, thinly sliced
1 tablespoon good quality olive oil
1 teaspoon red wine or balsamic vinegar
1/4 teaspoon granulated sugar
Salt & freshly ground black pepper 

Instructions

1. Slice the bread into 1/2-inch thick slices. Brush the bread slices with olive oil and air fry at 370ºF for 3 to 5 minutes or until lightly golden.

2. To make the tomato mixture, dice the tomatoes and remove any seeds. Combine the diced tomatoes, most of the sliced basil (leave a bit over for garnish), olive oil, vinegar, sugar and a generous seasoning of salt and pepper.

3. Remove the toasted bread slices from your air fryer and immediately rub the garlic over one side of the bread, to infuse the flavor.

4. Top each crostini with a spoonful of the tomato mixture. Garnish with fresh basil and serve.
