GAZPACHO

Celebrate summer’s beautiful tomato crop by making this Spanish-inspired cold soup! Blend up a big batch and serve the chilled goodness garnish with grilled shrimp or buttery croutons or even charred corn, for a flavor explosion~

Ingredients

1 pound ripe tomatoes, seeded & chopped
1/4 of a small red onion or 1 large shallot, peeled
1 cucumbers – peeled, seeded & diced
1 small red bell pepper, seeded & chopped
1 garlic clove, peeled
1 cup tomato juice
1/4 cup extra-virgin olive oil
1/4 cup Sherry Wine vinegar or red wine vinegar
1 tablespoon balsamic vinegar
1/2 teaspoon Worcestershire sauce
1 teaspoon ground cumin
Salt & freshly ground pepper

Instructions

1. Working in batches, combine the tomatoes, onion or shallot, bell pepper, garlic, tomato juice, olive oil, vinegars, Worcestershire sauce, cumin and salt and pepper in your Kalorik Personal Sport Blender…Or, combine the ingredients in the mixing cup and use your Kalorik Hand Blender.

2. Blend the ingredients until smooth.
