Meaty Mushroom Skewers
Tired of vegetarians feeling left out or forgotten at the family BBQ? Try this savory, meaty mushroom skewer with all the flavor and none of the animal products! Grilled to perfection these skewers can be made in under 30 minutes with a flavor that tastes like it took all day! Switch your creminis for larger portabella mushrooms for the best burger replacement - so good even meat eaters want to get in on the action!
2 pounds cremini or baby portabella mushrooms
¼ cup apple cider vinegar
¼ cup maple syrup
¼ cup low sodium soy sauce
1 teaspoon smoked paprika
1 teaspoon granulated garlic
2 tablespoons canola oil
1 tablespoon minced chives (for garnish)

In a large bowl, combine apple cider vinegar, maple syrup, soy sauce, smoked paprika, garlic powder, and canola oil in a large bowl. Whisk to combine.
Cut large mushrooms in half; smaller mushrooms can be kept whole. Add mushrooms to the marinade and mix to coat. Allow mushrooms to marinate for 20 minutes, mixing halfway to make sure all mushrooms are well coated.
Preheat your Maxx Air Fryer Oven Grill to 450F. Click the knob and rotate to extend the time to 20 minutes.
Remove the mushrooms from the marinade and arrange them by size. Carefully skewer 5-6 mushroom pieces onto each skewer, leaving a small amount of room between pieces.
Grill skewers 4 minutes per side, working in batches until all the skewers have been cooked.
