One 3 to 4 pound sugar pie pumpkin
2 tablespoons extra-virgin olive oil
1/3 cup maple syrup
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Salt and freshly ground pepper
1. Cut the pumpkin into wedges and scrape out the seeds and fibers from each wedge. Rub the flesh of each pumpkin wedge with olive oil and season with salt and pepper.
2. Place the pumpkin wedges in a single layer in your air frying basket and air fry at 380ºF for 13 minutes or until golden brown and tender when a knife is inserted into the flesh.
3. Meanwhile, combine the maple syrup, cinnamon and nutmeg along with a pinch of salt. Heat until warm.
4. To serve, drizzle the spiced maple syrup over the pumpkin wedges.
