CHICKEN TENDERS 2-WAYS

Crispy on the outside... juicy on the inside... served with a craveable sauce for sipping…what could be better? The sauce is fashioned after the very addictive favorite from that fast-food chicken sandwich place that everyone loves.

Ingredients

Buttermilk Chicken Tenders
1/2 cup Panko breadcrumbs
1 teaspoon celery salt
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
Freshly ground pepper
1/2 pound chicken tenders
1/2 cup buttermilk
Non-stick cooking spray

Pesto Chicken Tenders
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup prepared pesto
1/2 pound chicken tenders
Salt & freshly ground pepper

Dipping Sauce
1 cup mayonnaise
1/4 cup prepared Honey BBQ Sauce
1 tablespoon yellow mustard

Instructions

Buttermilk Chicken Tenders
1. In a mixing bowl, combine the Panko breadcrumbs, celery salt, oregano, garlic powder and freshly ground pepper.

2. Place the chicken tenders in a ziplock bag and pour the buttermilk into the bag. Seal the bag and shake to coat the chicken tenders.

3. Place the breadcrumb mixture in a shallow bowl. Remove the chicken from the buttermilk and dredge in the breadcrumb mixture to coat well.

4. Spray the chicken tenders with non-stick cooking spray on both sides and place them in your Air Fryer. Air fry at 380ºF for 5 minutes, then turn the tenders over, spray the tops with non-stick cooking spray again and air fry at 380ºF for 5 minutes more.

Pesto Chicken Tenders 
1. Combine the panko breadcrumbs and Parmesan in a shallow bowl and season with salt and pepper.

2. Working in batches, coat the chicken tenders with the pesto all over, then coat the tenders with the panko and Parmesan mixture, pressing to cover the tenders all over.

3. Spray the chicken tenders with non-stick cooking spray on both sides and place them in your Air Fryer. Air fry at 380ºF for 5 minutes, then turn the tenders over, spray the tops with non-stick cooking spray again and air fry at 380ºF for 5 minutes more.

Dipping Sauce
1. Whisk together the mayonnaise, BBQ Sauce and mustard.
