ROASTED CARROTS with PESTO & GOAT CHEESE


Ingredients

6 large carrots
2 tablespoons extra-virgin olive oil
Salt & freshly ground pepper
1/2 cup homemade or store-bought pesto
1/2 cup goat cheese
Fresh thyme

Instructions

1. Peel the carrots length and trim both ends. Slice each carrot down the middle lengthwise.

2. Place the carrots in a mixing bowl and add the olive oil. Season with salt and pepper and toss to coat well.

3. Place them in your air frying basket and air fry at 360ºF for 8 minutes or until crisp-tender and beginning to caramelize on the edges.

4. Scatter the air fried carrots on a serving platter and top with dollops of pesto. Crumble the goat cheese over the carrots and finish with thyme leaves.
